Butter. Sometimes. Usually I just put my hands on them. I believe pancakes are a finger food most of the time. A great pancake is naturally sweet, soft (I am the queen of sending back pancakes that have set in the heating window too long) and hot. They should be light and fluffy with NO black marks anywhere. Proper bubble migration management during cooking is key. Flip too soon and you get gooey flat pancakes. Flip too late and the cakes are dry and have too many holes on one side.
